I've been doing cakes for almost 12 years now and I still get nervous doing square cakes... there my nemesis but everyone loves the results... it's just one of those things I guess. This weekend we had a huge NFL wedding at Brunswick Plantation in Shallote, NC. Our bride Jennifer wanted to be creative so sure asked us to make 5 wedding cupcake towers to use as centerpieces for her tables which included 325 wedding cupcakes and also included one monogram wedding cake. Jennifer loves Gerber Daisies so we included 100 of them to match her theme of hot pink and black.

Her flavors included: Boston Cream Cupcakes with Chocolate Ganache, Lemon Cupcakes with Lemon Buttercream, Red Velvet with Cream Cheese Icing, Vanilla Cupcakes Vanilla Buttercream with Gerber Daisies, Chocolate Cupcakes with Gerber Daisies, Coconut Cupcakes with Vanilla Icing, Key Lime Cupcakeswith Key Lime Buttercream and Honey Glazed Peanut Butter Cupcakes.

Jennifer called to thank me this morning and said that everything was wonderful and the cupcakes that stole the show.... Honey Glazed Peanut Butter Cupcakes.

Cake... Carolina Cakes & Confections Southern Style Neopalitan Cake

Here are pictures of two great sweets... My husband and his birthday cake. We surprised him with a cake tower from the bakery. Here we have a European style cake with a southern flair. For those of you who know us, you are well aware that we do not serve pound cake. We created this cake to fit southern tastes which includes Vanilla, Chocolate Banana's Foster, and of course Southern Red Velvet. We thought it would be a fun play on the original. As pastry chefs, these recipes are true to the art so yes, we do flambe our Banana's Foster with Rum... so Yum! Happy 49th Birthday Baby! Did he get a new camera? Well close, I got him a new video camera, which takes pictures as well.

Wedding Buffets at Eddie Romanelli's Featuring Carolina Cakes & Confections

Dessert Bar Eddie Romanelli's. We are now a perferred vendor for Eddie Romanelli's. We are located just a few doors down and we are excited to have been asked to work with them as well as their restaurant group. This is not such a great picture. We have the bride sending us better ones. It is time for a new camera, I dropped this camera and I have no zoom. My husbands birthday is tomorrow. "I think he needs a new camera." :)-

Graduation Cakes

I have a new client that I must say that she really adores her best friend. She found the pattern to the baby blanket set in the baby's nursery and asked us to match the cake to the blanket. It is the best feeling in the world not only to have someone like your work, enjoy the taste, and give out a big hug in return for the effort. We also received a phone call the next morning after the shower. My customer Bonnie had rave reviews to say. This cake was shown off at the Blue Water Grill were we are a preferred vendor.

The Fairy Princess Tea Party at Thalian Hall which was presented by The Wilmington Ballet Company & Catered by our bakery turned out to be a huge success.  We were honered to be chosen to do the show.   We received tons of wonderful compliments throught the event.  Here we have a Childrens Dessert Buffet Menu including a Chocolate Mini Cupcake, Pretty in Pink Sugar Cookies , and the biggest hit of the whole event... Petite Four Truffle Pops.

Lemon Cake Topper with Lemon Italian Ice Buttercream

Monogram cupcakes for a very special bridal shower. Wedding Planner Parker Swann of Raleigh commissioned our bakery to do a bridal shower cupcake tower for a close family friend. We get calls from brides all the time from Raleigh but to be chosen to do an event for a professional wedding planner speaks volumes about our bakery. We created the stand for this lovely event. I don't like things that are too matchy, matchy so I chose a lemon yellow in the stand and a butter yellow for the icing and cupcakes. The City Club has asked us to work with upcoming events as well. From one chef to another, I cannot be happier...Thanks Parker.
