Finally. The day has arrived it's Valentines Day, a time for lovers and crushes to come and reveal their true desires. With all that in mind it is also time for me to come out of "MY CHOCOLATE COMA"! It has been great fun starting this blog and continuing this segment on chocolate. What I have created for you is a wonderful white chocolate lemon mousse with crushed red velvet cupcakes. The lemon really cuts through the chocolate in a subtle way. I chose a pool of both raspberry and chocolate to add the final textures and components to the cupcakes. Wilmington Chocolate Festival:Death by Cupcake Shots
It was a very busy weekend from the evening of Feb 6-8. We made over 500 of these chocolate cupcakes shots and we ran out of them in less then 2 hours. We were told that having 500 for the whole weekend was plenty but this was not the case. "We were told about the cupcake shots at Carolina Cakes & Confections," the patrons murmured. I kept getting calls at the bakery about how fast they were flying. We did not have enough time and ingredients for the last day, but we will be ready next year. The health department here in North Carolina is very strict and soon after these pictures were taken we had to put lids on all of them... boo hoo.

100Th Day of School Mini Cupcakes
Happy 100Th day of school to all the schools, students, parents and teachers. These white chocolate iced vanilla cupcakes were made for the 100Th day celebration. I was out with my family tonight at dinner when I overheard people talking about the cupcakes that our cupcakery made, it was quite a boost in self-esteem it just made me feel so wonderful. If you decide to make these at home or for professional use MAKE EXTRA PIECES. When these things hit the work table they are gone. Good Luck.
