Happy Chinese New Year! We wanted to come up with something special for the Year of The Ox. What we choose is something called "pink chocolate icing" in our chocolate feature. I can appreciate criticism on it... my son say that it looks like a cow. I hope my Chinese friends and family enjoy this one.

My Best Friend Leslie says "She's Just Being Cupcake ."
Just being "Cupcake" is not so easy anymore right? Not true! At Carolina Cakes & Confections, it's "All Buttercream All The Time! Here we have a white chocolate cupcake with a white chocolate buttercream floral topping. What is interesting about this cupcake is its texture. It is buttercream so you know that there is a silkiness to it, but what is so incredible that with each thin petal underlies an unexpected soft flakiness, it's funny to here people describe it. Why does it do it well... "She's just being cupcake!"

Coconut-Free German Chocolate Cupcakes
It's times like this when you can absolutely crave chocolate and everything that goes well with it. Sometimes it seems like that chocolate which is a really good friend of mine, has endless possibilities. But is it possible to have a coconut-free German Chocolate Cupcake? Well we think so and here it is. What we decided to do is substitute more toasted pecans in the filling, and I think that these are a wonderful solution for those who don't share that coconut enthusiasm. I must mention that there needs to still be a thin layer of chocolate icing on the cupcakes before the pecan filling, and to make it more "comatic"... shave some of that "black gold on it".

Happy New Year!!!
2008 has been a wonderful year. We are ready to "Take On" 2009 and make it the sweetest ever. We are kicking the year off with free cupcakes on Saturdays to every child 12 and under.
